Cindy’s Meatballs and Andy’s Favorite Meat Loaf

How about a little ground beef in your life this week?

I remember when I got the meatball recipe below from Cindy Brewer. Our church, Rainbow Presbyterian, had prepared a meal for some of the Katrina victims and I made these meatballs. Sam, Cindy Gail Acker and I carried the meal to a motel on Highway 59. I cannot remember what everyone carried, but I do remember those delicious meatballs. I know the families enjoyed the meal and they had enough left for the next day. It is so rewarding to help people. I would love to feed the world if I could.  Cooking is so personal, and you are giving of yourself. I was fortunate to be with those wonderful people.

Cindy’s Meatballs

2 pounds of ground chuck

½ cup applesauce

1 egg

1 medium onion, chopped

½ cup raw rice

½ teaspoon salt

¼ teaspoon black pepper

1 can tomato soup

1 can of water

Mix, roll into balls and place in a 9×13- inch dish sprayed with Pam. Pour tomato soup and water over balls and bake at 350 degrees for 30-45 minutes or until it begins to brown, and sauce thickens.  Recipe makes about 20 balls.

Andy’s Note: Try these meatballs on top of spaghetti, on a homemade meatball sandwich or just by themselves!

Andy’s Favorite Meat Loaf

2 ½ pounds of ground chuck

1 egg, beaten

2 teaspoons Worcestershire sauce

2 teaspoons Heinz 57 sauce

1 cup of ketchup

1 package dry Lipton onion soup

2 pieces stale bread, crumbled

½ cup bell pepper

¾ chopped onion

Black pepper

Mix all well with hands. Place it on a broiler rack with a pan underneath. I always shape mine into an oval shape.  I bake on 350 degrees for about an hour or until brown.

Andy’s Note: I know everyone has their own meat loaf recipe, but I thought I would share mine with you. It is so easy and moist. It makes a wonderful meat loaf sandwich the next day.
