Hot Cheese Dip, Cheese Wafers

These are two Super Bowl favorites to add to your wonderful table of party foods. I am always “digging” through recipes and I could not believe that I found my Hot Cheese Dip! Every time I prepare this wonderful dip, I have a sweet visit with the past.

Hot Cheese Dip

8 ounces shredded mozzarella cheese

8 ounces shredded extra-sharp cheese (please grate your own)

2 cups mayonnaise

1 medium onion, chopped fine

1 can chopped mild green chiles, drained

Black olives, optional

1 (1 1/2 ounce) package sliced pepperoni

Combine all ingredients except pepperoni and spread in a baking dish. Arrange pepperoni on top.  

Bake at 325 degrees for 25 minutes. Serve with King-size Fritos. So easy and so good!

Andy’s Note: This is a good dip for all ages. Men love this dip! Try to bake this in an oval shaped white dish. You know how I am about appearances! In my opinion, food served on white is the “ultimate!”

Cheese Wafers

8 ounces extra-sharp grated cheese 

1 stick margarine (I use Parkay)

1 1/2 cups all-purpose flour

1 level teaspoon of salt

1 1/2 teaspoons red pepper (you may use more)

1 cup crushed pecans

Mix all ingredients together. (be sure cheese and margarine are room temperature) I put my pecans in my food processor because you want your pecans the consistency of pecan meal. After you have mixed, roll the mixture into logs the size of a quarter or a little larger. 

Refrigerate these for several hours or over night. Slice real thin and put them on a greased cookie sheet. I use Pam. Bake at 325 degrees for 22 minutes. The time is VERY important. When they begin to brown around the edges, they are ready. You want these to be really crisp.

Andy’s Note:   I could write a book on this recipe. My mother made these for years before I started making them. At Christmas, these would fill half of my freezer. Everyone seemed to want them for parties, weddings, teas, and of course, Gaston School functions. They are a little trouble to make, but they are soooooo good! You know I always associate people with food and my aunt Sandra Smith, whom I dearly love,  just loves these.

Just a thought: Great Southern women are usually great cooks!
