Sausage Quiche, Broccoli and Cranberry Salad

I am always looking for something different and easy to serve for dinner. This quiche is so quick and easy!

Our younger cooks will love to prepare this for the family. This is my favorite broccoli salad recipe.

I love the combination of the nuts and fruits. My sister said,”Andy, you better write it down before you forget it.” Ha!

Sausage Quiche

3/4 pound of Dean’s sausage (mild)

3 cups grated extra-sharp cheese (please grate yourself)

3 large eggs

Pet milk (large can 1 1/2 cups)

frozen deep-dish pie crust

Brown sausage and break up into small pieces as it cooks. Remove and drain sausage.

Place into pie crust. Sprinkle cheese over sausage. Whisk eggs and Pet milk to combine. Pour over the cheese and sausage. Place quiche on a baking sheet and  bake at 325 degrees for 40 to 45 minutes or until center is firm.

Andy’s Note: I found out real quickly that men love a quiche. Doug carried two to work and they wanted to know if the recipe was in my cookbook. This is a wonderful dish to carry to a family that is in need of food. The ingredients are in most kitchens.

Broccoli and Cranberry Salad

2 large heads of broccoli, chopped in small pieces

1/2 cup purple onion, sliced paper thin

1/2 cup dark raisins

1/2 cup dried cranberries

1 cup toasted pecans, just put in the oven a few minutes

1/2 cup sunflower kernels or sliced almonds

Dressing

1 cup mayonnaise

1/2 cup sugar

4 tablespoons vinegar

Mix altogether before you begin chopping broccoli. Let it sit until sugar has melted. Add to salad slowly and stir. Refrigerate salad until ready to serve.

Andy’s Note: If you use the stem of the broccoli, which I do, be sure and peel it.

I had made several variations of this recipe before I decided I really liked this one the best. One thing for sure, I do not like for a salad to be “swimming” in the dressing. Too much dressing can ruin a salad or slaw for me.

You need to pour the dressing on slowly, stirring frequently. This salad needs to be made in the morning if you plan to serve it for dinner in the evening.
