After a busy weekend, I woke up late the past Monday morning and dashed to our living room without my phone. My husband Alan was still in bed and I did not want to disturb him. I usually post a little something to the ladies in our exercise group on my phone, but I waited until Alan got up.
When Alan finally rose, I added to my post explaining why I was so late to the exercise session. When Alan saw what I was doing, he told me I should have gone back to get my phone earlier.
What Alan did not know was what I posted to the ladies group text, which read as follows:
“Good morning, hummers! I left my phone in the bedroom, and my dear sweet husband slept late. We learned at church yesterday that we were hosting a birthday party at our house after the service. When church got out, Alan scurried to Dollar General to get ingredients for quesadillas along with snacks and drinks. He then started making quesadillas non-stop until everyone stopped eating. He’s a trooper. Our in-laws, who are high-dollar chefs, said the quesadillas were excellent, which sounded fancy in their Greek accents. Anyway, I did not want to disturb Alan’s sleep.”
In my mind, this text served as an explanation of why I was so late to the class, but the next day at the exercise session, everyone was wanting Alan’s recipe for quesadillas. That is when Alan found out what I posted about him that morning.
It slipped my mind that three of our exercisers speak fluent Spanish. Their ears probably perked up at the story of quesadillas. The recipe is easy and the perfect go-to for an unplanned birthday party. The ingredients are canned chicken, salsa and cheese melted between two flour tortillas. We have a quesadilla maker, but it can be made in a skillet like an omelet. It’s a simple meal that is repeatedly requested at the Scott household, including high-dollar chefs. Plus, it is the only thing all four of our grandchildren will eat.
We were pleasantly surprised with the family attending church and coming to our house again. This time we went out to eat – at our local Mexican Restaurant, of course.
