Let’s fill up some cookie jars this week!

Chocolate Chip Cookies
18 ounces Duncan Hines yellow cake mix
1 egg, beaten
3/4 cup Crisco oil
1 tablespoon
vanilla flavoring
2 handfuls of semi-sweet chocolate chips

Mix together all of the ingredients except the chips. Add chips after the batter is well mixed. Bake at 325 degrees 12-15 minutes. Do not over bake. Roll into balls and bake on parchment paper or greased cookie sheet.
Andy’s Note: These cookies were sold at Gaston School for many sporting activities. I always enjoyed seeing someone eating one of my cookies during a football game.

Peanut Butter Cornflake Cookies
2 cups sugar
1 cup white corn syrup
2 cups peanut butter
5 cups cornflakes
1/2 stick margarine

Combine sugar, syrup and margarine in a saucepan. Heat to boil, stirring all of the time. Remove from heat and add peanut butter. Mix well. Pour over cornflakes and mix. Spread in a pan and cut into squares.
Andy’s Note: This recipe came from Gaylesville’s lunchroom many, many years ago.

Happy cookie baking,

Andy
