Southern Cooking: Shrimp Dip, Hawaiian Aloha Dip and Sad Cake

Let’s get ready for some football with some snacks and goodies! Roll Tide and War Eagle!

Shrimp Dip

8 ounces cream cheese

1 cup mayonnaise

1 (11-ounce) cream

of shrimp soup

1 (4-ounce) can

shrimp, drained

1 cup chopped onion

1 tablespoon lemon juice

Combine the cream cheese and mayonnaise in a medium bowl and mix until well blended. Add the soup, shrimp, onion and lemon juice and stir until completely mixed. Chill until ready to serve.

Andy’s Note: I can picture my mom’s friendly smile as people would plead for this recipe. She served it for years before revealing that it had been printed on the cream of shrimp soup can! Thank you Campbell’s for the great recipe and this great memory.

Hawaiian Aloha Dip

1 (8-ounce) package

cream cheese

1 cup flake coconut

2 teaspoons lemon juice

1 medium can crushed pineapple, drained

1 1/2 teaspoons of

ground ginger

1/2 cup finely

chopped pecans

Beat cream cheese until light and fluffy. Add remaining ingredients. Chill and serve with assorted crackers.

Andy’s Note: I love this dip and I believe it is because it reminds me so much of my pineapple cheese dip.  For this dip, I love to use graham crackers and even vanilla wafers. You know me; my favorite cracker to seve with any spread or dip is wheat thins.

Sad Cake

2 cups Bisquick

1 box light brown sugar

2 cups chopped pecans

4 eggs, well beaten

Frosting

1/2 box powdered sugar

4 ounces cream cheese

1/2 stick margarine

1 teaspoon vanilla

Mix all cake ingredients well. Pour onto a cookie sheet. Bake at 350 degrees for 20-25 minutes.

For frosting, mix sugar, cream cheese, margerine and vanilla together. Frost the cake while it is still hot.

Andy’s Note: Why is it called a sad cake? Because you are sad when it is gone.

Andy’s Note:  I read this in an old cookbook the other day, and I just have to share it with all of you.

You may think this is a crazy idea, but it works. Place pecans or crackers in a large plastic bag. Get all air out. Tie end of bag. Place in a large brown paper bag. Turn down bag at top a couple of times. Place bag under car tire on carport or cement driveway and run over it for 2-3 times. This will crush them really well and also save a lot of time and energy. Thank you, but no thanks! I will continue to use my food processor for chopping nuts.
