There isn’t anything more special than having a beautiful pound cake under a crystal dome on your kitchen counter.

Buttermilk Pound Cake
1 cup Crisco shortening
2 cups sugar
4 eggs
1 cup buttermilk
1/4 teaspoon soda
3 cups sifted cake flour
1/4 teaspoon salt
2 tablespoons vanilla
1 teaspoon almond flavor

Lemon glaze:
1 cup powdered sugar
1/4 cup margarine, melted
1/4 cup lemon juice

Combine shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Dissolve soda in buttermilk. Add flour and salt alternatively with buttermilk and flavorings. Pour into a greased and floured tube pan and bake at 325 degrees for one hour and 15 minutes. Toothpick test after one hour. Cool 10 minutes, remove from pan and spoon on lemon glaze. For lemon glaze, combine all ingredients in a small bowl, mix well and spread on top of cake.
Andy’s Note: This pound cake is delicious sliced with butter on top, hot from the oven, covered with homemade whipped cream and fresh strawberries.

Happy cooking,
Andy
