Southern Cooking with Andy Bedwell

Sour Cream Apple Pie
2 eggs, beaten
3/4 cup white sugar
1 cup sour cream
2 tablespoons flour
1 teaspoon vanilla
1 teaspoon apple pie spice
Pinch of salt
2 cups sliced apples
Topping:
1/3 cup brown sugar
1/3 cup flour
1 teaspoon apple pie spice
1/4 cup butter

Mix until crumbly. Bake at 350 degrees for 30-40 minutes. Also delicious with sliced fresh peaches instead of apples.
Andy’s Note: Most pies are a little better with a scoop of vanilla ice cream.

Grated Apple Pie
2 cups grated Granny
Smith Apples
One egg, beaten
1 1/3 cups sugar
1 tablespoon
all-purpose flour
1 teaspoon cinnamon
1/2 cup margarine, melted

Mix all ingredients together and pour in an unbaked pie shell. Bake at 325 degrees for 1 hour.
Andy’s Note: I have made this pie many, many times. In the picture, I chopped the apples, but the pie is much better when you grate the apples.
