Mississippi Pot Roast and Green Bean Casserole

After a long day, I think you would love coming home to this hearty roast simmering in their crock pot.

This green bean casserole is another five-star recipe for me.  Both of these would be so good to have for a Sunday luncheon.  

Start your roast early Sunday morning; combine your green bean casserole on Saturday. 

What a feast!

Mississippi Pot Roast

Boneless chuck roast (small enough to fit down in your crock pot)

1 package of Hidden Valley Dressing Mix

1 package Au Jus Gravy Mix

1 stick butter (not margarine)

Brown your roast on both sides in a hot, greased skillet.  Place your roast in your crock pot and add all other ingredients.

You do not even melt your butter. Cook on low for 8 hours. No, you do not add any water.

Andy’s Note: My sister, Mary Fielder, told me about this roast recipe. Not only is it delicious, but it is so easy.

She also uses the crock pot liners.  Have you ever used these?

Green Bean Casserole

2 tubes of Ritz crackers

1 1/2 sticks of margarine, melted

3 cans French style green beans, drained

1 can shoe peg white corn, drained

1  8 ounce can of water chestnuts, drained and sliced

8 ounces sour cream

2 cups extra-sharp cheese, please grate yourself

1 can of cream of chicken soup

1 medium onion, chopped

Crumble 1 tube of crackers into a lightly greased dish. Melt 1 stick of margarine and combine with beans, corn, chestnuts,sour cream, soup, onions and cheese. Mix altogether and pour over crumbs. 

Crumble remaining tube of crackers. And, yes, you sprinkle over the top. Dot with remaining 1/2 stick of margarine. 

Bake at 325 degrees until bubbly around the edges (about 45 minutes). Be careful and not let the crackers get too brown. 

And yes, you sprinkle this with parsley before you bake.

Andy’s Note: This is definitely a favorite of my entire family. It is requested at every family function that we have. 

My mother would always ask if I were going to add it to my menu. It really will be an asset to any meal. 

You know, I associate my dishes with people. My aunt, Cora Dean Carr, loved it as well as my mother. 

This casserole deserves a beautiful white, oddly shaped dish. I have one that Mary Virginia gave me years ago that is oval shaped with high ends.

cinnamon, and a sprinkle of nutmeg), lemon chess pie and a glass of cold sweet Southern tea!
