Bridgette’s Pound Cake and Squash Dressing

While I was vacationing in Panama City Beach last week, I met some wonderful ladies from the great state of Georgia. 

We discussed recipes and menus for a luncheon that one of the ladies was planning for the following week.  

Together we decided a “cold plate” would be so light and appropriate for a group of ladies in the summer. 

I shared with her the menu I used for Ron Townsend’s staff luncheon when he was manager of the Holy Comforter in Gadsden. 

Menu: Chicken Salad, Potato Salad, Congealed Salad, (cut in a square) served on a bed of curly lettuce with club crackers and a Chocolate Brownie.  

And of course, a goblet of Sweet Southern tea!  It is amazing what you can accomplish under a gazebo on the beach. 

Bridgette’s Pound Cake

1/2 cup + 1 tablespoon shortening

1 stick real butter

3 cups sugar

5 eggs

3 cups plain flour

1/2 teaspoon baking powder

1 cup whole milk

1 teaspoon vanilla

Cream shortening and butter with sugar. Add eggs one at a time, beating well after each. Add baking powder alternately with flour and milk in sugar mixture.   

Continue beating, adding vanilla while beating. Pour into a greased and floured tube pan and bake in a COLD oven at 350 degrees for 1 hour and 10 minutes.

Andy’s Note: Bridgette Johnson is one of my favorite people and I dearly love her sister, Pam Raines, from Rainbow City.  

Bridgette lives in Destin, Florida and I am always asking her to share one of her wonderful recipes with me. 

I have many pound cake recipes (I know you do also) but I love to try different ones.  This one is at the top of my list.

Squash Dressing

3-4 cups cooked squash, drained

2 cups cornbread, crumbled

1/2 cup onion, chopped

3 eggs

1 can cream of chicken soup

1/2 cup margarine, melted

1 teaspoon sage

Mix together and bake at 350 degrees for 30 minutes.

Andy’s Note: In my opinion, this is one of the best recipes for squash. I usually always double this recipe. 

I talk to a lot of people who do not like onions but PLEASE do not leave them out of these recipes. Use the dehydrated, dried, flaked or throw them in a food processor. 

I can not imagine this dish without an onion flavor. This is so easy and so GOOD!
