Sloppy Joes and Homemade Corn Dogs

Spring Break is here and that means a lot of “hungry” children at home. A crock pot of sloppy joes would be so convenient to have in your kitchen. Most children love corn dogs and these are so easy to prepare. I made these last weekend and my family really liked them.

Sloppy Joes

2 pounds ground chuck

1 large onion, chopped

1/2 cup bell pepper, chopped

1/2 cup light brown sugar

2 cups ketchup

2 teaspoons 57 sauce

1 can pork and beans

2 teaspoons black pepper

3 shakes of worcestershire sauce

Brown your ground chuck. Add all other ingredients together and put in your crock pot. Cook on low for about 6 hours.

Andy’s Note: I could not have raised my children without making these over and over. If a few more friends came in to eat, I would just add another can of pork and beans. I served these to the faculty at Gaston School many years ago. If you want to fill a bunch of football players, a girl’s softball team and a group of ladies, please serve this dish. I always serve this on an open-faced hamburger bun with plenty of chips, trays full of chocolate brownies and good sweet Southern tea. This dish seems to grow with the crowd!

Homemade Corn Dogs

1 1/2 cups self-rising cornmeal

3/4 cup self-rising flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 Tablespoon sugar

3/4 cup buttermilk

3/4 cup water

1 egg

2 packs of hot dogs (I use the all beef)

This makes a lot of batter; add more water if it gets too thick.

Mix all together. Put six tablespoons of cornstarch in a bowl. Roll your hot dogs in the cornstarch; tapping off excess. Then dip your hot dogs in the batter. Slowly slide into oil. Fry 3 or 4 minutes until golden brown. Your oil must really be hot. I use my tongs and move them around while they are frying.

Andy’s Note: I cut these in half before I batter them. All you need with these are a bag of chips, mustard and ketchup. I can just see these on a huge platter at a party. What an appetizer!
