Southern Cooking with Andy Bedwell – American Pie

“As American as apple pie” is a favorite and true expression. Let’s bake some delicious pies this week.

 

Lemon Chess Pie


2 cups sugar
1 tablespoon all-purpose flour
1 tablespoon cornmeal
4 eggs
1/2 stick of butter or margarine
1/4 cup lemon juice
1 tablespoon grated lemon rind
1/4 cup milk

Sift flour and meal into sugar. Beat eggs slightly and add sugar mixture. Mix well. Add butter, lemon juice, lemon rind and milk. Pour into a 9-inch unbaked pie crust. Bake at 325 degrees for about 45-50 minutes.

Andy’s Note: If you haven’t made this delicious and easy pie, please do. Of course, I love lemon anything!

 

Melissa’s Egg Custard Pies


6 eggs, beaten
1 1/2 cups sugar
3 cups milk
1/2 teaspoon nutmeg
1/4 teaspoon salt
2 teaspoons vanilla
2 unbaked pie shells

Mix ingredients together and bake at 325 degrees for 45 minutes.

Andy’s Note: I used one deep-dish (you have to bake longer) pie shell or two regular size. As I have said previously, Melissa Bedwell and her family are fantastic cooks. This pie is wonderful! I hope all of you realize that we have some great cooks in this county.

 

Chocolate Chess Pie


1 cup sugar
3 tablespoons corn meal
3 tablespoons cocoa
3 eggs, beaten
1/2 cup margarine
1/2 cup light corn syrup
1 teaspoon vanilla
Pinch of salt
One unbaked deep-dish pie crust

Mix all ingredients together and pour into an unbaked pie shell. Bake at 325 degrees for 1 hour. The center should shake a little but will probably be done.

Andy’s Note: This is my grandson’s favorite pie. Matthew and I entered this pie in a contest in Rainbow City and came in 2nd place. He told me all the way home that my pie was better than the one that came in first place. Bless his heart, he was so encouraging.
