Stuffed Jalapenos and Icebox Cookies

Football season is here! I can remember years ago when “tailgating” meant eating out of the trunk of your car. Are any of you old enough to remember packing your trunks for the college games? Ladies, do you remember wearing dress clothes and gloves? Things have really changed. As far as the food, we tried to pack dishes that did not have to be chilled. Heaven forbid, if we mentioned using a cooler for anything but beverages. Both of these recipes will be good for tailgating today.

Stuffed Jalapenos

18 peppers

8 ounce cream cheese

1 chopped green onion

1/2 cup grated cheddar cheese

bacon

bar-b-q sauce

Clean out seeds and white membrane. Mix cream cheese, green onion, and cheddar cheese together until smooth. Stuff each half with mixture. Wrap with 1/2 piece bacon around each half and secure with a toothpick. Brush each half with bar-b-q sauce. Bake at 275 degrees for 1 hour.  

Andy’s Note: If you want these hotter, add some seeds to your mixture. Mary thought these were warm without adding the seeds. I also had to increase my temperature while baking to 350 degrees because of the bacon. Just watch while baking. These taste delicious. My sister-in-law, Martha Wright, tried these and decided she had to ask for the recipe. My wonderful family and friends help me find so many good recipes. Martha does not like to cook as well as I do, but she is always looking for good recipes for me to try.

Icebox Cookies

1 cup butter (real)

2 cups brown sugar

2 eggs

1 cup chopped nuts

3 1/2 cups plain flour

1/2 teaspoon salt

1 teaspoon soda

Cream butter and sugar; add eggs. Mix well. Stir salt and soda with flour. Add nuts and mix into first mixture. Roll out into a large roll or two small ones. Put in the refrigerator overnight. Sprinkle a little flour on your board before you start slicing. Slice very thin and bake at 325 degrees until crisp. They should make about 5 dozen. I always spray Pam on a cookie sheet regardless if the recipe says to or not.  

Andy’s Note: If there is any recipe associated with my childhood, it would be an icebox cookie.  You do not see very many in cookbooks today, but they are delicious! This is a wonderful cookie to send home with your children for them to bake in their own ovens. Great surprise! Give them an icebox cookie roll as they LEAVE your house.
