Mother’s Pecan Pie

As some of you know, I published my cookbook, “Southern Cooking with Andy Bedwell,” and it was a dream come true to actually have all of my favorite recipes in one book. 

I cannot remember a time in my life that I did not enjoy cooking, collecting recipes and carrying dishes to different functions. 

My Mother was a fabulous cook and we talked about different recipes continually. She was the greatest supporter of my cookbook.

I hope this column will encourage younger cooks to enjoy trying new recipes. To you seasoned cooks, I hope I can add a little flair and humor to your dishes. I will be sharing some recipes from my cookbook but I also will be adding new recipes. I am a recipe “nut” and will always be a collector of good Southern recipes. By the way, I would love for you to send me some of your family’s favorites. I would NEVER turn down a good recipe!

I want to begin my column with Mother’s Pecan Pie Recipe.

6 eggs, beaten

3 tablespoons all purpose flour

2 tablespoons vinegar

1 1/2 cups sugar

1 1/2 cups light Karo syrup

1 stick margarine (I always use Parkay)

2 cups chopped pecans

1 tablespoon vanilla

2 unbaked deep-dish pie crust

Mix all together and bake at 325 degrees for 1 hour.

Andy’s Note:  As you can see, this makes two pies which is wonderful.  You can eat one and freeze the other.  This is a one bowl pie and is so easy and so good.  Be  sure and mix your sugar and flour together first so that you will not have so many lumps.  Also, be sure and use a whisk and beat real well and  then add pecans last.  Divide mixture into your pie crust.  I have made this pie  for years and it is definitely the “best of the best.’  One reason I chop my pecans is because it makes the pie so much easier to slice than leaving them in halves. 

This pie means Christmas to me and it is Dale Fielder’s (my brother-in-law) favorite. 

When I was baking for friends, I always had these in the freezer during Christmas. They would call at the last minute and ask if I had anything left in my freezer and I would always say, “pecan pies”.

I hope you will add this to your Christmas Pie collection and I do not believe that you will EVER be disappointed.
